Mom's Taco Dip
For our friends Game Night on Saturday, I made my mom's taco dip for the first time and it was very yummy! I also made our favorite Buffalo Chicken Dip!!!

Sunday Katie was still here - we basically just hung out for the day - nothing special other than our at-home manicures while watching Shrek 3 since we were denied getting a mani/pedi at a salon I had coupons for since they were booked. On a SUNDAY? What?
Friends Game Night & Funny T-Shirt Night
We had Tim's friends Amy Fabs & Chad, Amy "Not Z" and her hubby Pat (the Hansens!), Steve & Anna and Billy & Jenn over for a Game Night!
This Game Night had a theme - Funny T-Shirt Night! I do have pictures I will post from home of each person's funny t-shirt!
Tim, Pat, Billy & Jenn played the 80s Game while the Amys, Chad, Steve, Anna & I played Guesstures!!! Very very fun!
There was a ton of food once again, including the aforementioned taco dip and buffalo dip as well as Amy Fabs' meatballs, the Hansen's mini-wontons, Steve & Anna's cupcakes and Billy & Jenn's deviled eggs!
Humor
We'll see how long this lasts, but this week I decided to start calling the many crazy pot holes around here "Vampires." This if from when Justin Timberlake hosted SNL the first time, back in 2002 or so and did the Punk'd skit, acting as Aston Kutcher. A part of it is punk'ing 50 Cent by having a vampire in his hotel bathroom...so 50 cent opens the door and then says "i'm not going in there - there's a vampire in there!!" in a funny voice....soooo that's how we say it as we are driving over pot holes.
20-Second T.O.
Miscommunication and things we know we shouldn't say!
We went grocery shopping on Saturday in preparation for Game Night and when we have a lot of groceries, I'll pull up to the door to unload, then go park. We had several bags, but not a bunch so when I pulled into the lot I asked Tim what he thought we should do and he just didn't respond at all. So I got annoyed and said something again but he hadn't been paying attention at all b/c he was apparantely listening to a radio commercial, but I had no clue. So I got mad at him for ignoring me and not signaling that he was trying to listen to something and he said, "what, i have to pay attention to you every minute??" So I got SUPER mad and said, "when I'm asking you a question - YES!"
So we get upstairs and I'm still furious so we continue to argue. I make the mistake of bringing up some other topic to bitch about, which is a hot button item for Tim, so that made HIM super pissed so then he calls me a bad name, which is when I stormed out!
So the initial issue to be fixed was Tim should have signaled that he was listening to the radio so I woulda know not to talk or at least known he wasn't paying attention to me. I should not have brought up a random topic into the fight, and he should not have called me a name - which is my big hot button.
Aww...That's Nice
Ok so because of the 20-Second T.O. - I stormed our and was going to go to Starbucks, but all I said was "Have fun with your friends tonight!" So Tim thought I was gonna drive up to Milwaukee! So he followed me down and stood behind my car so I couldn't leave (unless I woulda backed into him which would have been SO white trash!). I had locked my car doors, though so we ended up talking through my car window. We talked through it and calmed down. He went upstairs, but I needed a few minutes of Monica time. When I came back inside, I asked him if he followed me because he was angry or because he was scared. He said both, but more scared. That really put it all into perspective and took away all the anger because that's what it comes down to in the end.

MONTH #3: January 17 - February 17, 2008, Continued...
Recap
Our third month of marriage was pretty much the most social month we've ever had as a couple!
We hosted a Superbowl Party, a Game Night with Tim's family, a Katie-visit weekend, hung out with new people, went on a road trip to Iowa and even a random night out in Milwaukee with Katie following our Louis C.K. show!
Marriage Epiphany
In the great marriage debate, some of the popular arguments coming from the nay-sayers are:
"It's only a piece of paper" or
"What's going to change once there are rings on our fingers?"
And believe me, I see the point behind these arguments. In the months I was getting antsy to get that ring on my finger, I would think of those arguments to not fret so much about it.
But, now I see, marriage IS so much more than that.
Tim and I owned our condo together for over a year before we got married, so while we were bound by that already, we are still so much more bound now!
First, before 11/17/07 Tim & I could "break up." That's it - divide our things, sell the condo. But now we would have to get Divorced. Just the sound of it sounds SO much more intense. Heck, we need lawyers just to do it!! You don't need that when you break up!
Second, while before November 17, Tim was "like family" to mine and I to his...but, we weren't family. We have official family titles now - son and daughter-in-law, brother and sister-in-law! That certainly changes the perspective from my brother saying "my sister's boyfriend" - which gives a level of disconnect.
Thirdly, the whole "why do we need rings to prove our love?" argument is dramatic. But in a way, it's true! Before we were engaged, I could live life without anyone knowing of Tim, unless I talked about him. Even if we're out together, there's no telltale sign to distinguish between it being our first date versus our 200th! But now, my name has changed and everywhere we go, people see the rings on our fingers. We are now and forever known as married!
Lastly, and this is really the largest chunk of my epiphany, is the investment our friends and family and, heck, even our vendors made in our wedding! Besides the assumed "obligation" our close friends and family may have felt they had to be at our wedding, it's pretty safe to say that everyone who attended our wedding believed in our relationship to at least some degree. Even for our friends and family who didn't know both of us, they still believed in whichever one of us they knew - that we were making a huge commitment and that our love was now official. Our wedding day was one of the biggest and most important days of our lives, if not THE biggest! Because come what may - children, new homes, new trips, new memories - will all be a result of our wedding day.
But getting back to the "investment." Even on the smaller scale, when I think about everything that had to come together for our wedding - all the different hands in the pot, if you will, it really makes me realize that our wedding was truly an investment!!!
-We spent 2 hours with Father Chuck a few months before the wedding so he could get to know us and our story, and he spent God only knows ; ) how much time, thought and consideration into that great homily he gave!
-The church choir, cantor and string quartet performed the gorgeous wedding music, providing the setting and soundtrack for the pinnacle of our wedding day
-The photographers spent 12 hours following us around, posing us and capturing the special, funny and beautiful moments of our wedding day and the artistic hours they will spend designing our wedding album will tell that story
-The DJ's entertained our guests, continued to tell our story with the songs they played and made the last hours of our wedding day as memorable as the first!
-My hair was styled ever so meticulously and my make-up applied to transition me from my last moments of Monica Simon to my first day as Mrs. Monica O'Neill, as beautiful as I could ever be.
-The cake, flowers and reception hall were all prepared with a wedding in mind - that they were integral pieces necessary to make our wedding complete.
And that's not even the half of it!!!
Our families spent great amounts of time and money hosting parties and showers for us and helping with many aspects of our wedding planning.
Our bridal party spent time and money to plan and attend our bachelor/bachelorette trips on top of the guys getting their tuxes fitted and ordered and the gals doing the same for their dresses plus their hair!
While the bridesmaid dresses will most likely hang in the back of a closet for years to come, as long as Tim & I remain a happy couple and have a healthy marriage, when Katie, my sister, Lorie, Chelsea, Tina & Michelle and even the girls - Paige, Taylor and Isabella, catch a glimpse of that dress stuffed in the back corner of that closet from time to time, they'll at least know it stood for something.
And for now and forever, Tim & I and our families will look at our wedding pictures, seeing my fancy thousand-dollar Oleg Cassini gown, my hair and make-up that took over 2hrs to complete, the bridesmaid dresses I made my friends wear, the tuxes Tim wore and made his friends wear, the children in our wedding party who only stayed that age for what seemed like a blink of an eye, the flowers the florist at Alpha flowers worked hard to assemble, the cheesecake the baker in West Allis assembled and delivered oh-so carefully, the Domes in the background of our magnificent wedding portraits, and the Radisson reception hall that was set up exactly as requested...and remember that Saturday November 17, 2007 was a joyous, romantic, sentimental day and one hell of a party!!!
And someday, when our children look at our wedding pictures...we will still say the same thing...and I'm betting we'll still feel that way.

MONTH #3: January 17 - February 17, 2008

Enchiladas
I know Katie just posted a recipe for Enchiladas - but this was my new recipe for the month, so I gotta post it :) Maybe we can have an Enchilada-off
1 1/2 lbs. ground beef
1-16oz. can refried beans
1/2 C chopped onions
1-10oz. can Enchilada sauce
2 chopped tomatoes
1 1/2 C shredded cheese
1/4 C butter
1/4 C flour
1/2 tsp salt
1/4 tsp pepper
3 T cooking oil
1/4 tsp paprika
12 tortillas
2 C milk
3/4 C ripe olives (we don't like olives, so omitted these)
Brown beef and onion; drain
Stir in beans, salt and pepper
In another pan, heat oil, quickly dip tortillas in hot oil until soft
Place 1/3 C meat mixture on each tortilla
Top with chopped tomato and roll tightly, place seam side down in 13 x 9 pan
Melt butter, stir in flour, dash of salt and paprika
Add milk and enchilada sauce
Cook and stir until boiling - boil for 1 minute
Stir in cheese and [sliced olives], pour over tortillas
Bake at 350 for 30minutes
(Serves 6)
Will You Go Out With Me?
Eve 6 Concert at Chicago City Limits in Schaumburg
It was a Friday night. We went to Chili's first for dinner, Tim had ribs and I had fajitas!
We bought the concert tickets a few weeks ahead of time, so it was awesome to have something on the calendar to look forward to.
There were a few opening bands so we were feeling really old. Not because we were surrounded by teenie-boppers like at the Panic! At the Disco concert, but because standing for 2hrs was killing us and we got super tired being a Friday night.
But all in all we had a good time. Eve 6 played some new stuff but a lot of their old stuff, so it was a big flashback to early college. Eve 6 was Tim's favorite band in college, so it was cool to sort of "share" the experience with him!

Road Games
On our drive up to Milwaukee to see comedian Louis C.K., we started up a new sort of road game. [We typically play the alphabet game with the billboards and freeway signs]. Our new game was coming up with City, State names after job titles. I don't remember any specific ones - but for instance: Plumber, South Dakota or Veterinarian, Florida or Gynocologist (sp?), Missouri. This derived from Tim thinking the Pennsylvania town King of Prussia is hilarious!
New Quotes
Other funny moments from the past month was the onslaught of "milk, milk, lemonade", "that's what she said", and "RI ron't RIKE remonade" - to mean "snow"- on our Iowa trip.
This continued into Katie's visit which also unveiled the true meaning behind Soulja Boi's [no, i have no idea how to spell that stupid name] "Superman" song and quotes from Tracy Morgan on SNL doing Brian Fellowes, such as "that rat needs a haircut."
Throughout the month, Tim & I said "Tim (or Monica)....C'mon" from How I Met Your Mother in the stylings of Ted Mosbey.
Good Talk
By going to Zach Vogel's funeral, it got us on the death topic. We talked about how Tim has been "lucky" having such a young family, but he's also had more deaths because he's lived with more generations in his family (pretty much all of his great-grandparents were alive when he was growing up). Whereas I had lost many family members before I was even born (I only ever knew my two grandma's and one great-grandma)...and then of course I endured a series of family deaths in college.
We've only experienced two deaths close to us since we've been together - Tim's great grandmother and Tim's stepdad's mother (so, step-grandmother). It will be interesting how we will cope together when a more detrimental loss occurs.

I'm starting this new section to list ways Tim & I have made our lives and marriage better. Either by luck or us making it happen!
Monica's New Job
My new job at Aspen Marketing Services is an improvement in many ways!
First, my commute has been slashed from an hour or more to 20-25min. I also received a little bump in salary which will equal over $200 extra Net per month. I went from being an Account Executive at a yellow pages agency, doing something I couldn't have cared less about to being a SENIOR Account Executive at a "real" ad agency where I work on the Qwest Retail Promotions account. So, while I don't have passionate feelings about Qwest, I'm working on big projects involving direct mail, store signage, radio spots, etc. for Qwest's store Grand Opening events - which so far seems very fun!!!

Putting things on the calendar gives us structure and something to look forward to. our condo has felt even more like a home in the past month with all of our various guests filling it :)
Tax Return
We are getting nearly $7K (joint) in a tax return this year!!! We haven't decided for certain where it will all go, but the primary objective will be to pay off my car - which I owe about $3K on still, then toss a little to our CC's, and a little to savings!

Long Over-Due Recipe!
Heavenly Chicken
Ok, I wrote about this in my month #2 blog and never typed up the recipe! So here goes...
Ingredients:
6 boneless chicken breast halves
1 Cup butter
1 7oz. package of Italian salad dressing spices
1 can cream of mushroom soup
1/2 cup dry white wine
4 oz. cream cheese
Wash chicken and place in crock pot. In a medium saucepan, melt butter and stir in the rest of the ingredients until combined. Pour over chicken. Cook in crock pot, on low, for 3-4hrs. Serve hot over noodles or rice (I recommend chicken rice-a-roni!!)

Valentine's Day
This year for Valentine's Day we went up to Milwaukee on Friday the 8th to see Louis C.K. But to still celebrate on actual Valentine's Day, we made steak tenderloins on our George Foreman grill with red skin seasoned potatoes and tomato basil soup! It was delicious!!!!!

Our Valentine's dinner wasy extra yummy and it was nice to have a full meal at home. And we just had Boyz II Men CD instead of TV like we normally do!
20 Second T.O.
There was a miscommunication apparantely regarding Valentine's Day gifts. When we first bought the tickets to see Louis C.K. we said that would be our Valentines. *I* meant it as, that would be what we did for Valentine's Day. *Tim* took it as that was our gift to each other! I was going to buy him a gift, but it did come out b/f then that Tim didn't think we were getting each other big gifts, so since I hadn't bought him anything yet, it worked ok. He had randomly gotten me a silly tank top that says "SnuggleSlut" and I decided afterall to still get him part of his gift - the DVD box set of "Planet Earth." We were at Best Buy that weekend and so Tim bought me "An Affair to Remember" and "Casablanca."

Valentine's Day
This year for Valentine's Day we went up to Milwaukee on Friday the 8th to see Louis C.K. But to still celebrate on actual Valentine's Day, we made steak tenderloins on our George Foreman grill with red skin seasoned potatoes and tomato basil soup! It was delicious!!!!!

Our Valentine's dinner wasy extra yummy and it was nice to have a full meal at home. And we just had Boyz II Men CD instead of TV like we normally do!

There was a miscommunication apparantely regarding Valentine's Day gifts. When we first bought the tickets to see Louis C.K. we said that would be our Valentines. *I* meant it as, that would be what we did for Valentine's Day. *Tim* took it as that was our gift to each other! I was going to buy him a gift, but it did come out b/f then that Tim didn't think we were getting each other big gifts, so since I hadn't bought him anything yet, it worked ok. He had randomly gotten me a silly tank top that says "SnuggleSlut" and I decided afterall to still get him part of his gift - the DVD box set of "Planet Earth." We were at Best Buy that weekend and so Tim bought me "An Affair to Remember" and "Casablanca."

WEEK #12: February 3, 2008- February 9, 2008
Home Cookin'
We spent two days in Iowa and one in Milwaukee, so a very offbeat week. There were no home cooked meals this week. Except we hosted a Superbowl party and I made magic cookie bars and Tim made cheesy goo salsa - plus many other snacks were served!
On Saturday we hosted Game Night with Tim's family and I made magic cookie bars again, Pizza Dip, weinie roll-ups, BLT dip and other snacks. So what we've lacked in "family dinners" we made up for with all the party hosting!

We have gone Social Butterfly crazy!!!!
Sunday - Superbowl Party
We had several people over for the game: Billy/Jenn, Guido/Sarah, Garry/Jacqui, Ellen, Anthony and Brad. We had tons of food. People were rotating in and out of a game of "Ship, Captain, Crew" for the entirety of the Superbowl game!
Iowa
We drove to Cedar Rapids, IA on Tuesday night after work for Zach's funeral (Josh's brother). We stayed in a Microtel hotel with Chelsea and Nick. It was a terrible drive in the big storm, a very sad day of course - but we did actually have some fun. We had to stay an extra night b/c of all the snow, so while that was awful, it gave us more time to hang out with Chelsea, Nick, Josh & Tina. We joked around a lot and created/overused some catch phrases such as "milk, milk, lemonade", "that's what she said", and "Ri Ron't RIKE Remonade" as a response to pretty much anything!

We went to Milwaukee on Friday night to see comedian Louis C.K. at the Pabst Theatre. Afterwards we picked Katie up and went to Monica's bar for a couple drinks. We shot the shit and had a good time.
Family Game Night
We had Tim's mom, John & boys, Eileen/Larry, Mike/Sue and Uncle Ed. Again, tons of food. We played the 80's & 90's game as usual.
Aww...That's Nice
So this isn't very romantic - but it was nice that Tim really wanted to go to Zach's funeral. Even though Tim & Josh were friends way back in the day, and then reunited in the past couple years, I still think of Josh as more my friend than Tim's b/c he's in my "group." But it's nice to see and know how good of a friend Tim is. So it was an "awww" moment for both of us to make that trip to be there for Josh & Tina.

We had a couple quick spats on our way to/from Iowa. I was overly frustrated by the weather and drive and road conditions. I was going off bitching about it all and Tim told me to calm down or something so I couldn't help but snap. He just didn't want me to have a meltdown on the drive, so wanted me to take it easy, but b/c of my level of frustration, I was just defensive that of course I had every right to go off!

Herb Crusted Tilapia
Ok, so I didn't do any of the seasoning or anything fancy like that. We bought the fillets pre-seasoned from Dominick's. But it was GOOD! with some butter & herb Lipton noodles, it was a very quick and easy dinner. The tilapia fillets were in the more pricey section, but for a meal like that from time to time it's worth it!

Wednesday Night - dinner @ Olive Garden (Monica)
Seems weird that this was the only social moment of the week b/c the next month is just a blur of events scheduled for us!
Anyway, Wednesday night I went w/Christine, Ashley and another former SMG-er to Olive Garden after work. It was just dinner and a drink, so short but good, especially b/c that was the night new job offer! So it was good to tell Ashley as a practice round.

We've been rewatching Lost in the past couple weeks - and both Friday and Saturday night during the second episode, I'd curl up on Tim & pass out. I used to fall asleep on Tim all the time back when we'd hang in his basement on the futon. That doesn't happen as much anymore b/c I usually just go to bed, so it felt nice.
Part 2 - It took me 3 1/2 hour to get home on Thursday night during the snowstorm. Tim not only waited 'til I got home at 8:30pm to have dinner (he had it ready when I walked in) but he also distracted himself to not watch the Lost premier 'til I was there!

Ok, believe me - our home life is not all rainbows and smiles. We certainly have the whole "married couple spats." But they literally last between 30-seconds and a 5 minutes and I can't even remember what they're about!

Taco Night
Since we ate out or just quick meals all week, Saturday was our last chance for the week. We went grocery shopping and decided to get taco fixins. It was yum! Ironically, we had been re-watching last season's Lost episodes, and the one we watched whilst eating tacos was the one where Kate is "Monica" and "doesn't do taco nights."

Waaaay back when we first started dating and I would visit Tim in DeKalb and that winter when he returned home, we frequently went to Borders/Barnes & Noble to browse books and goof around.

Home Cookin'
Enchiladas
These days, since Tim is home before me, he starts dinner. But, good news! That is about to change as I have accepted a new job only 20min away, versus and hour. So I will now consistently be home by 5:30, with much less stress from a long drive and a longer night ahead of me as I'll be able to sleep in an extra hour longer than I have been!
But anyway, this week was my recipe of the month! We made Enchiladas. And yes, we. And thank God I didn't try it on my own b/c it is a several step - several pans dirtied - recipe. But it was fun! I recommend it for a weekend though :)
